Can Roasted Potatoes and Toast Cause Cancer?!

The Food Standards Agency in the UK recently launched a new campaign to educate people on the cancer risk associated with acrylamide and how to reduce exposure. Acrylamide is a naturally occurring substance and levels of it increase when starchy foods are cooked for too long at high temperatures. With this in mind, the campaign is recommending that people cook starchy foods like bread and potatoes until they are golden yellow or golden brown to reduce the amount of acrylamide that forms. So is this something to stress out about? Here are my thoughts.

Just the name of the show Revenge Body sent up some red flags for me. Name aside, I looked more into the show and watched a lot of the preview clips they've posted online and I definitely have some thoughts about it. Overall, it seems to me that the show is based around a lot of messages about weight, appearance, and health that I think do more harm than good.

Eat Peanuts to Prevent Allergy? New Child Feeding Guidelines!

Food allergies are a big deal and everyone wants to know what we can do to prevent them. Some recent research has suggested that early and frequent exposure to peanuts could reduce a child's risk for developing a peanut allergy and we now have formal guidelines to go along with it! The National Institute of Allergy and Infectious Disease (NIAID), which is part of the National Institutes of Health (NIH) has released new guidelines for introducing peanuts to kids based on a child's risk. Overall, these guidelines recommend early introduction, rather than delaying introduction of peanuts.

LaCroix seems to be everywhere and lots of people love it. This carbonated water with fun flavors has taken over many shopping cart, but you might be wondering if LaCroix is good for you. Is it healthy to drink LaCroix or is there something to worry about? The first thing I like to look at with any food is if it's real food. A Peek at Hamilton's World!

I'm trying something new here on this channel and I want to know what you think! I want to try uploading vlogs here every now and then when I go on a fun trip, go to a YouTube event, go to a food or nutrition event, etc. These would be extra videos in addition to my normal Tuesday/Thursday videos. This first one is from a trip Jasen  and I took to the Historic Triangle in Virginia. We went to Colonial Williamsburg, Historic Jamestowne, Jamestown Settlement, the American Revolution Mueseum at Yorktown, Yorktown Battlefield, and Busch Gardens Christmas Town. It was a packed trip, but we had a lot of fun seeing so many historic places and listening to the Hamilton cast recording while driving between locations. :)

Cranberry Pistachio Bark | Real Food Recipe

One of the fun things about the holiday season is all of the delicious food! With that in mind, here's a recipe for Cranberry Pistachio Bark that's easy to make and tastes amazing! Choclate, cranberries, and pistachios make a great combination as far as flavor goes, plus the red and green look makes this recipe perfect for Christmas. You can make this real food dessert for a party, give it as a gift, or just keep it for yourself. 

 

Cranberry Pistachio Bark

Ingredients

  • 10 ounces semi-sweet chocolate chips
  • 1/2 cup shelled pistachios, chopped (from about 1 cup in shell)
  • 1/2 cup dried cranberries (or dried cherries)

Directions

  1. Line a baking sheet with parchment or wax paper.
  2. Melt chocolate chips in the microwave or in a double boiler until smooth.
  3. Pour melted chocolate onto the parchment lined baking sheet and spread into a thin, even layer with a spatula.
  4. Sprinkle chopped pistachios onto chocolate in an even layer. Repeat with dried cranberries.
  5. Gently pat the pistachios and cranberries into the chocolate with your hand to make sure they adhere well to the chocolate.
  6. Place baking sheet in the refrigerator until the bark is set up, at least 30 minutes.
  7. Once the bark has hardened, remove baking sheet from the refrigerator and break the bark into smaller pieces.
  8. Store bark in a container in the refrigerator and enjoy!
