December Favorites 2016 | Healthy Food, TV, and More!

December is almost over so I'm here to share some of my favorite things from the past month! This month I have a healthy dinner I've been loving, a couple produce items I've been eating a lot of, a fun adventure, and a new favorite TV show to tell you about. This is also my last monthly favorites video after doing them for 2 years. I explain why in the video.

A Peek at Hamilton's World!

I'm trying something new here on this channel and I want to know what you think! I want to try uploading vlogs here every now and then when I go on a fun trip, go to a YouTube event, go to a food or nutrition event, etc. These would be extra videos in addition to my normal Tuesday/Thursday videos. This first one is from a trip Jasen  and I took to the Historic Triangle in Virginia. We went to Colonial Williamsburg, Historic Jamestowne, Jamestown Settlement, the American Revolution Mueseum at Yorktown, Yorktown Battlefield, and Busch Gardens Christmas Town. It was a packed trip, but we had a lot of fun seeing so many historic places and listening to the Hamilton cast recording while driving between locations. :)

As a dietitian, I know people are often interested to know what I actually eat! In this What I Eat in a Day video I'm giving you a look at what I ate on a day in December. This time of year brings lots of hearty, comforting food to combat the cold weather, so that's what you'll see me eating. I try to stick with real, whole foods as the foundation of my diet and this day was no different. I hope you get some healthy meal ideas and inspiration from seeing what's on my plate!

 

A dietitian's message about holiday eating (it's not what you think).

Today I'm sharing some of my thoughts on holiday food. This time of year can be tough if you're trying to eat healthy or are working on your relationship with food and now that Christmas is less than a week away, things are at their peak. With that in mind, I wanted to give you my message about holiday eating and navigating all of the food that's coming your way.

Is Granola Healthy?

Granola is often thought of as a health food and can have a kind of health halo. The word "granola" is even used to describe people, places, and things that are healthy or "crunchy." But is granola actually as healthy as a lot of people think? Not exactly. There are a couple things about granola that can make it not so healthy, so if you love granola you definitely want to keep these in mind.

 

Making a New Year's Resolution that ACTUALLY Works!

Lots of people make New Year's resolutions every year and many of those are around health and wellness. Whether it's weight loss, exercise, or eating healthier, taking care of our bodies is a popular category. Unfortunately though, a lot of these resolutions don't pan out and a lot of people have gone back to their old ways by February. So how do you make a good resolution that you can stick to and that actually works? Here are some tips to do just that.

Cranberry Pistachio Bark | Real Food Recipe

One of the fun things about the holiday season is all of the delicious food! With that in mind, here's a recipe for Cranberry Pistachio Bark that's easy to make and tastes amazing! Choclate, cranberries, and pistachios make a great combination as far as flavor goes, plus the red and green look makes this recipe perfect for Christmas. You can make this real food dessert for a party, give it as a gift, or just keep it for yourself. 

 

Cranberry Pistachio Bark

Ingredients

  • 10 ounces semi-sweet chocolate chips
  • 1/2 cup shelled pistachios, chopped (from about 1 cup in shell)
  • 1/2 cup dried cranberries (or dried cherries)

Directions

  1. Line a baking sheet with parchment or wax paper.
  2. Melt chocolate chips in the microwave or in a double boiler until smooth.
  3. Pour melted chocolate onto the parchment lined baking sheet and spread into a thin, even layer with a spatula.
  4. Sprinkle chopped pistachios onto chocolate in an even layer. Repeat with dried cranberries.
  5. Gently pat the pistachios and cranberries into the chocolate with your hand to make sure they adhere well to the chocolate.
  6. Place baking sheet in the refrigerator until the bark is set up, at least 30 minutes.
  7. Once the bark has hardened, remove baking sheet from the refrigerator and break the bark into smaller pieces.
  8. Store bark in a container in the refrigerator and enjoy!
