Skillet Potato Recipe | Quick + Easy

This skillet potato recipe has been a staple in my house here lately! It's quick, easy, and super yummy! Plus, it goes with just about everything. Here's how you make it!

 

 

Skillet Potatoes

Ingredients

  • 2.5 pounds potatoes (about 4 large), diced into 1/2 inch pieces
  • 2-3 tablespoons pastured lard or other cooking fat
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt

Directions

  1. Heat lard or fat of choice in a medium cast iron skillet.
  2. Once the skillet is hot, add potatoes and spices. Stir until spices are evenly incorporated.
  3. Reduce heat to medium low and cook, stirring occasionally, for about 15 minutes, or until potatoes are cooked through. Serve.

3 Valentine's Day Chocolate Recipes | Easy + Simple

Valentine's Day is almost here and nothing says "I love you" like a homemade gift. Here are three delicious homemade chocolate recipes that are simple and easy to make: chocolate dipped figs, chocolate almond clusters, and heart-shaped peanut butter cups.

 

Chocolate Dipped Figs

Ingredients

2 ounces

chocolate chips, melted

12 dried figs

Directions

  1. Line a baking sheet or small cutting board with parchment paper.
  2. Holding the stem, dip a fig in the melted chocolate. Allow excess chocolate to drip off and place the fig firmly on the lined baking sheet. Repeat with the remaining figs.
  3. Refrigerate the figs until the chocolate has hardened, about 10 minutes.
  4. Remove the figs from the baking sheet and enjoy or store in the refrigerator.

Chocolate Almond Clusters

Ingredients

8 ounces chocolate chips, melted

1 cup raw almonds

Sea salt

Directions

  1. Add almonds to melted chocolate and mix until evenly distributed.
  2. Spoon dollops of chocolate almond mixture onto a lined baking sheet.
  3. Sprinkle clusters with sea salt.
  4. Refrigerate until clusters have hardened, about 20 minutes.
  5. Remove clusters from baking sheet and enjoy or store in the refrigerator.

Heart-Shaped Peanut Butter Cups

Note: Quantities vary depending on the mold you use. These are the quantities for my mold.

Ingredients

10 ounces chocolate chips, melted

1/4 cup creamy natural peanut butter

Directions

  1. Fill the heart-shaped molds about halfway with the melted chocolate.
  2. Place the mold in the the freezer for 10 minutes, or until the chocolate has solidified.
  3. Spoon about a teaspoon of peanut butter into the center of each heart, being careful not to let it touch the edges of the mold.
  4. Cover the peanut butter with the remaining melted chocolate and tap the mold on the counter a few times to even out the chocolate's surface.
  5. Place the mold in the freezer for 30 minutes, or until the peanut butter hearts have solidified.
  6. Take the mold out the the freezer, carefully remove the peanut butter hearts from the mold, and enjoy or store in the refrigerator.

Smoky Chili Recipe

Ingredients

1 tablespoon cooking fat (pastured lard, grass-fed butter, coconut oil, etc.)

1 medium onion, diced

2 pounds grass-fed ground beef

4 cloves garlic, minced

1 tablespoon paprika

1 teaspoon ground cumin

1 teaspoon salt

1 chipotle in adobo sauce, minced

(2) 28 ounce cans diced tomatoes

1.5 cups dry kidney beans, soaked and cooked (about 3 cups cooked beans)

1.5 cups dry black beans, soaked and cooked (about 3 cups cooked beans)

1 quart water or beef broth

Directions
  1. In a large soup pot, heat cooking fat over medium heat.
  2. Add onion to pot and cook, stirring occasionally, until soft and translucent, about 5 minutes.
  3. Add ground beef, garlic, spices, and salt and cook until beef is browned.
  4. Add chipotle in adobo sauce, diced tomatoes, beans, and water/broth to pot and stir to distribute ingredients. Bring to a simmer and cook, partially covered, for 30 minutes.
  5. Serve chili, with toppings if desired.

Massaged Kale Salad

Ingredients

2 bunches kale

1 teaspoon salt

1-2 tablespoons lemon juice (or other acid such as apple cider vinegar or red wine vinegar)

1 tablespoon extra virgin olive oil

Directions
  1. Remove kale from stems and rinse to remove any dirt. Allow kale to dry.
  2. Add kale to a large bowl with 1 teaspoon of salt and 1 tablespoon of lemon juice.
  3. Massage kale for about 5 minutes. The kale should wilt and become less bitter. Add extra lemon juice if needed (some tougher varieties of kale may require more acid to break down).
  4. Add 1 tablespoon extra virgin olive oil to kale and toss to distribute.
  5. Serve as is or add other toppings as desired.

Ingredients

2 cups milk (I use whole, grass-fed milk)

1 tablespoon maple syrup

2 teaspoons cocoa powder or carob powder

Directions
  1. Pour milk into a small sauce pot and heat over medium heat.
  2. Once milk begins to steam, add maple syrup and mix with a whisk until incorporated. Repeat with cocoa powder.
  3. Taste to adjust flavor if needed, and then pour into mugs and serve.

Caramel Apples

Ingredients

6 medium apples

1 cup heavy cream

1 cup Sucanat or other unrefined cane sugar

1/2 cup honey

4 tablespoons butter

1 teaspoon vanilla extract

Toppings such a crushed nuts or coconut (optional)

Special Equipment

Food/candy thermometer

Wooden sticks for handles

Directions
  1. In a medium sized sauce pan combine heavy cream, Sucanat, honey, and butter.
  2. Heat over medium heat, stirring frequently until all ingredients are dissolved.
  3. Once ingredients are dissolved, cook caramel, stirring constantly, until the it reaches 245°F.
  4. Remove caramel from heat, add vanilla extract, and stir to incorporate.
  5. Line a baking sheet with parchment, a silicone baking mat, or aluminum foil. Prepare apples by inserting sticks into stem ends and placing on lined baking sheet.
  6. Dip and roll apple in caramel until evenly coated. Once apple is coated, remove it from caramel and allow excess to drip back  into the pot.
  7. Place coated apple on baking sheet to cool. Repeat with remaining apples.
  8. Roll caramel coated apples in toppings, if desired. Place tray of finished apples in refrigerator to finish cooling.

Pumpkin Puree

Ingredients

1 or more whole pumpkins

Directions
  1. Preheat oven to 400°F.
  2. Remove stem from pumpkin and cut pumpkin in half.
  3. Removes seeds and pulp from pumpkin with a spoon, ice cream scoop, your hands, etc. Set seeds aside to clean and roast later.
  4. Slice pumpkin into smaller sections for roasting. If using a small pumpkin, slice into quarters.
  5. Place pumpkin sections skin-side down on a baking sheet and roast in the oven for 40 minutes or until done. Depending on how thick your pumpkin is, it might take a little longer. You'll know the pumpkin is done when you can easily pierce the pumpkin flesh with a fork.
  6. Remove pumpkin from the oven and allow to cool.
  7. Once cooled, removed pumpkin flesh from the skin with a spoon (or your hands) and place in a blender or food processor. Blend until smooth.

Ingredients

Corn on the cob, husks and silk intact

Directions
  1. Preheat oven to 350°F.
  2. Trim excess husk and silk from top of corn cob with kitchen scissors. Remove any loose pieces of husk.
  3. Place corn in oven, directly on rack and cook for 30 minutes.
  4. Remove corn from oven and allow to cool enough that you can remove the husks and silks.
  5. Serve and enjoy!

Asparagus Frittata

Ingredients

2 spring onions, white and green parts thinly sliced

1 pound asparagus, trimmed and cut into 1.5 inch pieces

8 large eggs

1/2 teaspoon salt

pepper to taste

Butter or other fat for cooking vegetables and greasing cast iron skillet

Directions
  1. Heat butter or fat of choice in a skillet over medium heat. Add onions and cook, stirring frequently, until soft and translucent, about 5 minutes. Remove cooked onions from pan and set aside.
  2. Add more butter to your skillet and cook asparagus until crisp tender and bright green, about 5 minutes. Remove cooked asparagus from pan and set aside.
  3. Add eggs, salt, and pepper to a large bowl and whisk thoroughly.
  4. Add cooked onions and asparagus to the beaten eggs and mix until everything is evenly distributed.
  5. Grease a cast iron skillet with butter, lard, coconut oil or other fat and heat over medium high heat. Add egg and vegetable mixture to the hot skillet and turn heat down to medium low. Cook until the edges of the frittata are set and pull away from the skillet, about 10 minutes. The center of the frittata will still be liquid at this point.
  6. Set your broiler to low and place the skillet directly under the broiler. Cook until the frittata is cooked through and the top is golden brown, about 3-5 minutes. Watch closely during this stage to make sure that the frittata doesn't accidentally burn.
  7. Remove frittata from oven, allow to cool slightly, slice, and serve. I like to cut mine into 8 slices.

Ingredients

1/2 medium red onion, diced

1/4 cup balsamic vinegar

You favorite pizza dough, pizza sauce, and cheese combination

Directions
  1. Roll out your pizza dough and top with sauce and 2/3 of you cheese.
  2. Sprinkle diced red onion on pizza and top with remaining 1/3 of cheese.
  3. Cook pizza according to your crust instructions and set aside to cool.
  4. Heat balsamic vinegar in a small pot over medium heat.
  5. Once vinegar comes to a simmer, stir frequently until the vinegar is reduced by half, about 5 minutes.
  6. Drizzle balsamic reduction over pizza, slice, and enjoy!

How to Make Chicken Bone Broth in a Slow Cooker

Making bone broth is a great way to get more nutrients, save money, and make meals that taste delicious. Good news is, it's super easy to do in a slow cooker or Crock Pot! You get to go about your day while a yummy pot of broth simmers away on your counter.

 

Slow Cooker Chicken Bone Broth

 

Ingredients

Bones from one chicken

Assorted broth veggies like celery, carrot, onion, garlic, and herbs (whatever you have is fine)*

12 black peppercorns

Salt (to taste, I probably use about a teaspoon)

Splash of apple cider vinegar

Water

 

Directions

  1. Add all ingredients to your slow cooker with enough water to cover everything. Put on lid and cook on low for 12 to 24 hours.
  2. Once broth is done, turn off slow cooker and allow broth to cool a bit. Then, strain the broth into jars or containers to remove solids. Store broth in the refrigerator if you want to use it within the next few days or the freezer to save for later.

*Note: I keep a bag in my freezer for storing vegetable scraps like onion peels, carrot ends, and celery ends. Then, whenever I make broth, I can just go in my freezer and toss some of these veggies in the slow cooker. This saves money and time. Other scraps you can keep in this bag include garlic ends, asparagus ends, ginger peels, and fresh herbs that you won't be able to use up before they go bad. Don't include cruciferous veggies like cabbage, broccoli, and cauliflower because they can make things a little stinky.
